As part of my “almost winter” obsession with the crockpot, Beef Stew is a must! This is my favorite recipe because it uses very simple ingredients and I’m a firm believer that when it comes to cooking, less is more.

My husband and I went to Italy on our honeymoon and after looking back on all of the amazing food we ate, our favorite dishes were those that were incredibly simple. Many of them were just a few fresh ingredients. I aim to incorporate that philosophy into all of my cooking now. Simple is good!


  • 3 pounds stew beef
  • 1/2 t salt
  • 1/2 t pepper
  • 1/4 cup flour
  • 2 cups beef broth
  • 2 T minced garlic
  • 1 bay leaf
  • 1/2 bag baby carrots
  • 5 stalks of celery, chopped
  • 5 medium potatoes, chopped
  • 2 medium onions, chopped


1) Mix flour, salt and pepper in a gallon sized zipper plastic bag. Add stew meat and shake until the beef is coated evenly. Add beef to the bottom of slow cooker that has been sprayed with cooking spray.

2) Next layer your potatoes, carrots celery and onion on top of beef. Wisk together the minced garlic and beef broth. Pour broth mixture over beef and vegetables. Add bay leaf to the top. Cook on low for 8-10 hours or high for 4-5 hours. You will know it’s done when the beef starts to shred when touched with a fork.

Serve with a loaf of Italian bread. Enjoy this very comforting meal!
